I know y’all are going to think I’m out of my mind. And you’re probably right. But this isn’t the first time I’ve put raw steak on a pizza. I did it before on a French bread pizza and it was totally delicious. Of course, that was a little different type of steak. But if the steak is thinly sliced and a tender cut it will be perfectly delicious.

I know it’s a bit unconventional. Most recipes call for the steak to be cooked before you pop the pizza into the oven. And I’ve gone down that path, too. But to me, the steak gets over cooked and becomes tough. That might be okay for those that like their steak well done, but I’m not that type of steak girl.3

What cut of steak is best for Steak and Caramelized Onion Pizza?

Of course, you could use filet mignon. If you really wanted to. But for me, I used a center cut sirloin steak. I know the filet mignon is supposed to be a prime cut of beef, but it doesn’t have as much flavor as a center cut sirloin does. At least that’s how I see it. And if the sirloin is cut right, it will be tender and delicious just like a filet. But at half the price.

You could also use a ribeye. That’s my favorite cut of beef. And my grocery store sells shaved ribeye. I’ve made delicious Philly cheese steak tacos with that cut of beef. It’s so tender and has so much flavor. I used that cut on the first version of this pizza when I made it. But the crust was lacking, and the flavor just wasn’t there.

Unfortunately, it’s a large package of shaved ribeye. And unless I wanted to feed the whole neighborhood, it wasn’t practical to buy a package just for this recipe. Yes, I could have frozen the remaining beef for another recipe, but that just didn’t happen.

For this one, I opted for a small center cut sirloin. The steak was about 5 ounces and the perfect amount for this pizza. The trick is to make sure the steak is sliced as thin as you possibly can. The best way to make sure this happens is to pop the steak into the freezer for about 30 minutes before cooking your pizza. It doesn’t freeze the steak all the way through, but just enough to make it easier to thinly slice.

How do you make Steak and Caramelized Onion Pizza?

I am going to admit that me and yeasted breads never get along very well. I have a love hate relationship with them. They hate me, but I love them. There’s nothing more mouthwatering than the aroma of fresh baked bread in the oven. Needless to say, baking good bread is a bucket list thing for me.

However, this pizza dough came out perfectly. I was thrilled!! Usually, I put too much flour in there to start with. So, I’m learning to add a little at a time until it just starts to pull away from the bowl of the mixer. For me, on this brutally cold day, that was 2 1/2 cups of flour. I mention the temperature because cold days aren’t usually humid. And that makes a difference when baking bread. And macaron, ironically.

The longer the dough proofs or raises the better. It develops more flavor the longer it proofs. So, if you can make the dough the night before all the better for your pizza flavor. Just make sure to take it out 30 minutes before you plan to start making your pizza. It’s harder to stretch the crust out when it’s cold.

I watched a Colavita pizza Facebook live event. They were making pizza, of course. They spread their pizza out onto parchment coated with olive oil. Cooking it on olive oil coated parchment made the bottom of the crust crispy and delicious. And that’s exactly what it does! Plus, it also helps with removing the pizza from the oven.

I have a peel and a stone, but sometimes all that cornmeal really makes a mess. Until I’m more skilled in making pizza, I’m going to use this trick. My crust on my Steak and Caramelized Onion Pizza wasn’t soggy on the bottom. It really was crispy and delicious. And cooking it on the pizza stone probably made it even more crispy and delicious.

I love the combination of steak and caramelized onions together. The steak is rich and delicious. The onions are sweet and almost melt in your mouth. Combining the two into one Steak and Caramelized Onion Pizza tastes so good! Unlike any other pizza I’ve had or made.

Of course, to heighten the steak flavors, I sprinkled on my favorite steak seasoning. It has a smokiness to it and the perfect blend of pepper, garlic and other spices to really elevate any steak. Maybe one day I’ll make my own version, but we’ll see. The problem with making it at home is the smoke flavor. I mean, smoked paprika is good, but their blend doesn’t have a red color. There must be some other hickory smoked flavor in powder form out there.

Finally, there’s the cheese. I used an Italian cheese blend. It’s my go to for steaks. I would have liked a little Gruyere on there, but I didn’t have it in the fridge. Something salty would really elevate the sweetness of the caramelized onions in this Steak and Caramelized Onion Pizza. A sprinkling of Parmesan would be good. Maybe a Manchego or Gouda would be good. A smoked Gouda!

I mean, just look at that Steak and Caramelized Onion Pizza! Packed with tender steak, sweet onions, and lots of cheese. All on an easy to make, homemade pizza crust. And one recipe makes 2 crusts. One crust makes 8 slices. So, you do the math.

And yes, you can freeze the other dough. It will last in the freezer for 3 months is stored properly. I coat mine in olive oil and then vacuum seal it. If you don’t have a sealer, then you can wrap it in plastic wrap and then put it in a zip top plastic bag. The double bagging will prevent freezer burn from forming quickly.

Ingredients

For the dough:

  • 1 1/4 cups warm water
  • 2 1/4 teaspoons yeast
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons salt
  • 2 1/2 - 3 cups flour
  • 1 1/2 tablespoons olive oil

For the pizza:

  • 3 tablespoons butter
  • 1 teaspoon minced garlic
  • 3 ounces thinly sliced steak
  • 1/3 cup caramelized onions
  • 1 1/2 – 2 cups Italian cheese blend
  • 1/2 teaspoon steak seasoning
  • 1/2 teaspoon garlic salt

Instructions

For the dough:

    1. Combine the water with the yeast and the sugar in the bowl of a stand mixer.
    2. Allow the yeast to bloom until frothy.
    3. Stir in the salt, olive oil, and 2 cups of the flour.
    4. Using the dough hook, stir the mixture on medium speed until the dough forms a ball. If the dough sticks to the sides then add the flour 1/4 cup at a time until it pulls away from the sides of the bowl.
    5. Knead on medium speed until the dough forms a smooth ball.
    6. Turn the dough out onto a work surface and knead by hand a little. Form a ball and place in a bowl coated with olive oil.
    7. Cover with a clean tea towel and let the dough rise for an hour or until doubled in size.

For the pizza:

    1. Preheat oven to 450.
    2. Place the butter and garlic in a small, microwave safe bowl and heat for 30 seconds.
    3. Divide the dough into 2 saving one dough for later.
    4. Spread some olive oil on parchment paper and stretch the dough out to a 12-inch circle. If the dough resists too much to being stretched, then let it rest for 10 minutes and try again.
    5. Once the dough is stretched, brush the dough with the garlic butter mixture.
    6. Sprinkle with half the cheese and top with the steak. Sprinkle the steak with the steak seasoning and the garlic salt.
    7. Use a fork to spread the onions apart and place on top of the steak.
    8. Sprinkle with the remaining cheese.
    9. Carefully slide the parchment onto a pizza peel or an upside down sheet pan then slide the parchment off the peel or pan onto a pizza stone or pizza steel.
    10. Bake at 450 for 15 to 20 minutes or until the cheese is golden brown and the steak is cooked through.
    11. Cool for 5 minutes before slicing and serving.
