Jerk Marinated Pork

March 28, 2013

I feel the need to hike.  It's been too long, and I probably won't get the chance to hike this weekend either.  I think S has to work Saturday.  I guess I COULD hike by myself, but that's just not fun.  I used to walk by myself, but that was just to clear my head and sort of grieve the loss of my previous relationship.  This is why I kept telling everyone that I DID NOT need time by myself after I left my now ex.  I'd always spent enough time by myself.  Um...but that's a WHOLE other story. On … [Read more...]

Jerk Pork Loin

January 31, 2010

Click here for recipe EatingWell: May/June 2009 Wow was this good!! I was little hesitant as the recipe calls for a habanero, but I didn't use the seeds and only 3/4 of the pepper. I forgot to marinate the loin in the mixture. So shoot me. It was still excellent! I let it sit for about 30 minutes before I put it in the oven. I had some left over mixture that I'm going to use with some pork loin chops later on this week. I didn't taste much of the green onions, which is interesting … [Read more...]

Caribbean Rice

April 22, 2009

Caribbean Rice recipe Cooking Light, November 2002 I've never cooked rice with coconut milk. CTM doesn't like coconut so I've always been weary. This is one of those, I had a recipe and thought about following it but didn't really, dishes. I used 1 1/2 cups of chicken stock and 1/2 cup of coconut milk. Don't. The rice is really sticky. Use either the recipe allotted mix or 2 cups of chicken stock and 1/2 cup of coconut milk or some variation there of. It was creamy, but sticky. So, I had … [Read more...]

Grilled Jerk-Marinated Pork Kebabs

April 22, 2009

Grilled Jerk-Marinated Pork Kebabs recipe Cooking Light, OCTOBER 2008 So, apparently I'm boycotting skewers this week, even though the menu had like 3 recipes that required them. *snort* We just grilled the pork chops instead of cutting them up. They were thick loin chops that I had intended on cubing and skewering. Yeah. YUM! I don't think I've had jerk seasoning before. YUM! Of course, I ground my own cinnamon and allspice, because I'm a spice hoor, so it made the seasoning UBER tasty!! … [Read more...]

Mango and Black Bean Salad

June 9, 2008

Mango and Black Bean Salad Cooking Light, March 2008 So, I'm not really sure WHAT the tomatillo salsa does for this recipe. I may try it with regular salsa next time and see if that makes a difference. The mangoes were UBER ripe and tasted almost as sweet as candy!! I don't think there was enough of them in the mix, though. I did add some jalapeno chopped up in the mix to make it more like a salsa than a salad and I omitted the rice. Just not sure what that was for, either. I think … [Read more...]

Jamaican Chicken Thighs

June 1, 2008

Jamaican Chicken Thighs Cooking Light, May 2005 I don't think I've ever had jerk style seasonings before. It was easy to make, though. I ground up the ginger and the allspice, beause I only use whole spices with the sweet stuff. Then I mixed in the rest of the spices, making sure to add twice the amount of thyme because I love the stuff. Then added it all back to the spice grinder to combine thoroughly. This worked REALLY well. I rubbed the chicken skin and put some of the rub under the … [Read more...]
