Chili-Cheese-Potato Tot Casserole Southern Living, APRIL 2006 Okay, so this sounded really weird, but CTM was talking about a tater tot casserole so I thought I'd try it out. The chili was really good. We did not use chili starter. We just made our chili with a twist. I found a can of fire roasted tomatoes and added those along with some ground chiptole powder from Penzey's. Made for REALLY good chili. I don't think the pan was big enough, as we had LOTS of chili left over. It was okay. The … [Read more...]
Chicken-Green Chile Enchilada Casserole
Chicken-Green Chile Enchilada Casserole Cooking Light, December 2007 I couldn't find this recipe on their website for some reason. It must be an old one. This was REALLY REALLY GOOD! Made my CW's jealous the next two days for lunch, too. We didn't shred the chicken, for some reason, but we definitely will next time. I will be making this again!! 1 teaspoon vegetable oil 1 cup onion, chopped 3 cloves garlic, minced 1 4.5oz. can chopped green chiles, undrained 12 ounces cooked chicken breast … [Read more...]
Baked Ziti Casserole
Baked Ziti Casserole Cooking Light, OCTOBER 2007 YUM YUM and more YUM! We doubled the recipe was we had about double the ground turkey. It was our first REAL experiment with ground poulty that he wasn't all eh about. YUM! It's look weird when you're putting it together, and it was a little soupy when it came out of the oven, but that all setttled down when it was serving time. This does need a nice salad to go with it, though. The turkey didn't taste like turkey, it was nice. It cooks in the … [Read more...]
Baked Rigatoni with Beef
Baked Rigatoni with Beef Cooking Light, APRIL 2000 While I was waiting for the potatoes to cook yesterday, I put this recipe together. I used the Francesco Rinaldi baking sauce. I can't remember the actual name, but I remember it was for baking or something like that. I looked delicious and according to CTM, my BF, it tasted good. I undercooked the pasta because it will continue to cook in the oven. I didn't make it yesterday, but assembled it so I can bake it later. Thought I'd save some time. … [Read more...]
Two-Cheese Scalloped Potatoes
Two-Cheese Scalloped Potatoes Cooking Light, NOVEMBER 1998 Meh. The addition of ketchup and Worcestershire sauce makes this taste interesting to say the least. They were runny, undercooked, and the cheese didn't blend well with the milk mixture. I don't think I'll make this one again. If you decide to make it, cover it with FOIL so the potatoes can steam and cook so they're done in at least an hour. Mandolin or cuisinart to slice the potatoes Measuring cups and spoons Casserole dish … [Read more...]
Tuna Romanoff
Tuna Romanoff Cooking Light, JANUARY 1995 Photo courtsey of Food Fan at allrecipes.com This recipe, to me, seemed like a traditional Tuna Noodle Casserole with the addition of mushrooms and pimientos. I never add the pimientos. Just can't bring myself to pay that much for a jar of them. I may try some roasted peppers next time, though. This time I made the recipes with whole wheat noodles. I don't think I would do that again. For some reason, it detracted from the taste of the Parmesan … [Read more...]
