Mushroom Lasagna

February 22, 2012

Mushroom Lasagna COOKING LIGHT, JANUARY 2012 Yeah, I'm still not convinced on the "no bake" noodles.  I keep trying them thinking, maybe it's just me.  I'm starting to think it's really NOT me, but it's the noodles....  They're either not cooked enough, or just mush.  It was an interesting combination this time.  The noodles inside were mush, the ones on top were under cooked and crunchy.  *shrugs*I'm on the fence with this one.  It wasn't inedible, but … [Read more...]

Mexican Chicken Casserole

February 13, 2012

Mexican Chicken Casserole COOKING LIGHT, DECEMBER 1998This has potential.  Don't get me wrong, it was very good, but I thought it would have more flavor to it.  It was very creamy, and tasty, but the next time I make this, I will have to add some spices or something. I don't think my casserole dish is 11x17.  In fact, I don't think I've ever seen one that size conventionally available.  I think mine is 9 x something....11?  12?  *shrugs*  Consequently, … [Read more...]

Mushroom Rigatoni Bake

February 10, 2012

Mushroom Rigatoni Bake COOKING LIGHT, MARCH 2004 Yes, it’s as good as it looks!  It honestly didn’t take all that long to prep.  It was more difficult to wait for it to bake.  We had salad appetizers.  LOL No shiitakes at the store, so I used portabello caps instead.  Yes, it was a bit redundant with the baby bellas (aka cremini), but I didn’t mind!  I honestly didn’t think there were enough mushrooms.  I would have put more in had we had more … [Read more...]

Quick Pastitsio

January 28, 2012

Quick Pastitsio COOKING LIGHT, OCTOBER 2011 Yeah, I'm just about convinced I DO.NOT like pastitsio.  I think this is the second recipe I've tried...and nothing.  Just don't like it. It's bland.  It's dry.  It's pretty much tasteless.  This is the same family as the beef and cheese noodle bake I made a few years ago.  It has potential, but it would probably be an entirely different dish when it was finished. I won't make this again without some … [Read more...]

Chicken Enchiladas

July 5, 2010

Chicken Enchiladas recipe Cooking Light, May 2010 They need cheese in with the chicken. I would also add some green chiles or something. They were a bit dry in the filling. Or maybe some of the sauce in with the chicken? They were good and the sauce is mighty tasty. I was thinking as I read the recipe, "Hmm....tear up a tortilla and add it to the sauce? I hope it doesn't taste like Mexican polenta!" It didn't. It thickened the sauce and didn't add much to the flavor. I used fire-roasted … [Read more...]

Cheesy Chicken Enchiladas

November 15, 2009

Cheesy Chicken Enchiladas recipe MAY 2009I was a little skeptical with the yogurt, but then I thought it was close to cream cheese and it's used in several enchilada recipes. So, I ran with it. I had some chicken left over from the tamale casserole I made and used it in this recipe. I forgot to save some of the chicken for the topping. Oops They were pretty good. They were a little dry, so I would save some of the chicken soup to make sauce with or maybe a green enchilada sauce to pour over the … [Read more...]

Braised Chicken Thighs With Carrots and Potatoes

June 2, 2009

Braised Chicken Thighs recipe Southern Living, February 2006 This wasn't as good as the other braised chicken thighs with carrots and potatoes I already tried. Braised Herb chicken thighs or something like that. It was about the same as far as prep time and what not, but you through it in the crock pot and let it cook all day. It didn't seem like there was enough liquid to cook the carrots and potatoes, so I added a little more. It was okay, but I think I'd rather make the other one. Measuring … [Read more...]

Chicken Tamale Casserole

February 27, 2009

Chicken Tamale Casserole recipe Cooking Light, NOVEMBER 2008 This sounded really interesting. I had it on the list to make for a few weeks, and just didn't get around to it. I had all the ingredients, just was too lazy when it came time to make it on the weekends. O M G it was delicious!! I made it in a casserole dish that was smaller, so it took a little longer, but it was yummy!! I may make the corn stuff just as a side dish sometime!! Measuring cups and spoons Knife Cutting board Casserole … [Read more...]
