Creamy Feta-Spinach Dip

January 17, 2009

Creamy Feta-Spinach Dip Cooking Light, January 2000 O M G this is really good!! I've been taking it as a snack this week at work with some home made baked tortilla chips. It's very garlicky though, so you might want some gum or breath mints. LOL. I used frozen chopped spinach and drained it really well. The feta is a little more crumbled than I'd like. I may pulse it a few times in the Cuisinart and then stir it into the mixture. It would taste REALLY good warm with some toasted bread or … [Read more...]

Buttery Blue Cheese Spread with Walnuts

December 30, 2008

Buttery Blue Cheese Spread with Walnuts Southern Living, DECEMBER 2000 I made this last Christmas and decided to make it again this Christmas for CTM and I to snack on. It's REALLY good. This time, I tried to cut the recipe in half so it wouldn't make so much. I used 1/4 c margarine, 12 ounces of LF cream cheese, and 4 ounces of RF blue cheese. It's really good. If you like blue cheese, this spread is right up your alley. I forgot the chives and used Foxpoint from Penzeys this time. It's not as … [Read more...]

Caramelized Onion, Fig, and Blue Cheese Strudel

November 30, 2008

Caramelized Onion, Fig, and Blue Cheese Strudel Cooking Light, October 1996 I made this a loooooooooong time ago, but I remember I made it the other day when I saw another strudel recipe I made and thought I'd post this. I don't think this is the picture for the strudel. I think it's for the salmon and dill strudel which I haven't made. I made the filling the night before because I was taking it to someones house for a German night. It was really interesting. Everyone loved it, but I'm not so … [Read more...]

Creamy Stove-Top Macaroni and Cheese

March 14, 2008

Creamy Stove-Top Macaroni and Cheese Cooking Light, June 2006 It definitely was creamy, but it wasn't very cheesy. I mixed sharp RF cheddar with Sargento's four cheese Mexican mix. I think you need almost all sharp cheddar to make this cheesy. It was easy to make, and made A LOT of mac n cheese. We still have more than half of it in the fridge for left overs. December 24, 2008 - I revisited this recipe today. I only made a half a batch because this does make a shit load of macaroni and cheese. … [Read more...]

Two-Cheese Scalloped Potatoes

September 28, 2007

Two-Cheese Scalloped Potatoes Cooking Light, NOVEMBER 1998 Meh. The addition of ketchup and Worcestershire sauce makes this taste interesting to say the least. They were runny, undercooked, and the cheese didn't blend well with the milk mixture. I don't think I'll make this one again. If you decide to make it, cover it with FOIL so the potatoes can steam and cook so they're done in at least an hour. Mandolin or cuisinart to slice the potatoes Measuring cups and spoons Casserole dish … [Read more...]
