Crispy Salmon Cakes with Lemon-Caper Mayonnaise

January 15, 2008

Crispy Salmon Cakes with Lemon-Caper Mayonnaise Cooking Light, APRIL 2001 Since the last time I tried to make salmon cakes, I hercked when I had to pull the bones and skin out, I decided to get the stuff in the pouch. I didn't really drain it all that much. However, these were dry when I put them together. I would add more mustard or less crumbs next time. They were HUGE and really good. The sauce that you make is REALLY good too! I was surprised that I like them being as I'm not a huge salmon … [Read more...]

Beef Stroganoff

December 27, 2007

Beef Stroganoff Cooking Light, APRIL 2007 How can you go wrong with Beef Stroganoff?? You can't really. This was deliscious as usual. Made a bit of a mess with the pots, but it was worth it. This is already on my Make Again list. Knife Cutting Board Measuring cups and spoons Large saute pan Medium pot … [Read more...]

Beef Daube Provençal

October 15, 2007

Beef Daube Provençal Cooking Light, SEPTEMBER 2007 So, I'm not really making this per the directions. I did put it in my slow cooker, but then I added about 2 cups of baby bella mushrooms, used dried thyme instead of fresh, added 4 cups of water to cover the veggies in the cooker, and added about 2 T quick cooking tapioca to thicken it. It needed more than that to thicken it. I only had whole wheat flour on hand and didn't think you could make a slurry out of THAT for stew. It was DELICIOUS! I … [Read more...]

Swedish Meatballs

September 30, 2007

Swedish Meatballs recipe Cooking Light, JULY 2006 YUM! These were delicious. I made them with beef instead of chicken because that's what we had on hand, but they were still FABULOUS! There wasn't enough sauce to suit my BF, which I agree. For all the meatballs we made, there wasn't enough sauce. The flavor was delicious. The nutmeg really changes the flavor of the meatballs. The sour cream sauce was VERY tangy. I will probably try and make more of the sauce the next time I make … [Read more...]

Tuna Romanoff

September 20, 2007

Tuna Romanoff Cooking Light, JANUARY 1995 Photo courtsey of Food Fan at allrecipes.com This recipe, to me, seemed like a traditional Tuna Noodle Casserole with the addition of mushrooms and pimientos. I never add the pimientos. Just can't bring myself to pay that much for a jar of them. I may try some roasted peppers next time, though. This time I made the recipes with whole wheat noodles. I don't think I would do that again. For some reason, it detracted from the taste of the Parmesan … [Read more...]
