Blueberry Pancakes

August 22, 2009

Blueberry Pancakes recipe Cooking Light, August 2009 These were really, really, REALLY thick! The batter was UBER thick and I had to thin it to get it to come out of the measuring cup! HOLY SMOKE! I didn't top the pancakes with the blueberries after seeing how thick the batter was. I tried one with the blueberries on top and they just sat there and did not sink into the batter AT ALL! So, I added the to the batter. These are good. They're pretty filling, too. I didn't get hungry until around … [Read more...]

Lemon-Blueberry Muffins

July 20, 2009

Lemon-Blueberry Muffins recipe Cooking Light, April 2003 Yes, for some reason I got a muffin bug up my butt yesterday. I made these along with the Banana Corn Muffins to take to work. They were really wasy to make, too. Our grocery store had blueberries on sale and I thought these would be perfect to try. They were really moist and very lemony. I think they could use just a little more sugar to the mix, but that's just me. The blueberries were HUGE and exploded in the muffins. You can use … [Read more...]

Banana Corn Muffins

July 20, 2009

Banana Corn Muffins recipe Cooking Light, August 2005 These were SO easy, very tasty, and pretty cheap! I bought the Jiffy corn muffin mix to use the bananas I had in the freezer. When they start to get over ripe, I put them in the freezer to bake with. It makes them easier to mash and they keep for quite a while. I made a double batch and took half to work. Needless to say they didn't last too long. I will probably make them again because they were so easy!! If you don't have buttermilk, you … [Read more...]

Black Forest Cherry Cheesecake

December 25, 2008

Black Forest Cherry Cheesecake Cooking Light, July 2000 Since it's winter, there are no fresh cherries...well not at our Giant anyway. So, we used frozen dark sweet pitted cherries. I don't have a spring form pan and I forgot to line the cake pan with tin foil so it was difficult to get out. It took a little longer to cook than the recipe states and I didn't let it cool in the oven. It was delicious!! I'd never made a cheesecake before but this one turned out really good. We used chocolate … [Read more...]

Caramelized Onion, Fig, and Blue Cheese Strudel

November 30, 2008

Caramelized Onion, Fig, and Blue Cheese Strudel Cooking Light, October 1996 I made this a loooooooooong time ago, but I remember I made it the other day when I saw another strudel recipe I made and thought I'd post this. I don't think this is the picture for the strudel. I think it's for the salmon and dill strudel which I haven't made. I made the filling the night before because I was taking it to someones house for a German night. It was really interesting. Everyone loved it, but I'm not so … [Read more...]

Banana Pudding

August 26, 2008

Banana Pudding Cooking Light, May 1997 I have made this SEVERAL times and thought I'd post it on here. IT IS AMAZING! We LOVE this recipe and have made it twice in the past week and probably would make it ONCE a week we could stand the calories. The pudding is just tasty!! Sometimes, I dip cookies in it while I'm arranging the layers, it's that good. I add just a few drops of banana extract to the pudding mix with the vanilla extract to give it just a hint of banana flavor. The meringue layer … [Read more...]

Classic Banana Bread

August 26, 2008

Classic Banana Bread Cooking Light, September 2003 This recipe is really easy, really moist, and really good. The last time I made this was this weekend and I used lowfat vanilla yogurt instead of plain. I also added some chopped walnuts. I usually use I Can't Believe It's Not Butter stick and splenda instead of butter and sugar. Measuring cups and spoons Small mixing bowl Large mixing bowl Masher Electric mixer Loaf pan … [Read more...]

Mango and Black Bean Salad

June 9, 2008

Mango and Black Bean Salad Cooking Light, March 2008 So, I'm not really sure WHAT the tomatillo salsa does for this recipe. I may try it with regular salsa next time and see if that makes a difference. The mangoes were UBER ripe and tasted almost as sweet as candy!! I don't think there was enough of them in the mix, though. I did add some jalapeno chopped up in the mix to make it more like a salsa than a salad and I omitted the rice. Just not sure what that was for, either. I think next time, … [Read more...]
