Baked Ziti Casserole Cooking Light, OCTOBER 2007 YUM YUM and more YUM! We doubled the recipe was we had about double the ground turkey. It was our first REAL experiment with ground poulty that he wasn't all eh about. YUM! It's look weird when you're putting it together, and it was a little soupy when it came out of the oven, but that all setttled down when it was serving time. This does need a nice salad to go with it, though. The turkey didn't taste like turkey, it was nice. It cooks in the … [Read more...]
Champion Chicken Parmesan
Champion Chicken Parmesan Cooking Light, OCTOBER 2000 YUM! I LOVE chicken parm. I used jar sauce because it's make it THAT much easier to make. However, I do make my own sauce roasting whole, canned tomato ala Alton Brown. I LOVE that recipe!! Anyway, This is mighty tasty and, like I've said before I LOVE chicken parm! Knife Cutting board Measuring cups and spoons Medium saute pan 13x9 baking dish … [Read more...]
Spaghetti and Meatballs
Spaghetti and Meatballs Cooking Light, OCTOBER 2003 So, I cheated and bought jar sauce. I think we used Classico Sweet Basil or something like that. I didn't bake the meatballs, but sauteed them in a pan, but I did put them in the sauce to continue cooking while the water for the spaghetti boiled. *snort* I'm such a recipe massochist!! The meatballs were DELICIOUS, though. They were probably the best meatballs I've ever made aside from my chicken ones, which I should post some time. I also … [Read more...]
Italian Sausage with Three Peppers
Italian Turkey Sausage with Three Peppers Cooking Light, NOVEMBER 2004 As usual, I didn't follow the directions on this recipe. We used regular Italian sausage instead of the turkey kind. It just didn't look appetizing! I don't think you can screw this up and it's gonna taste just like you think it will. We topped it with marinara and served it on whole wheat buns. It was GOOD! Measuring cups and spoons Knife Cutting board Saute pan. … [Read more...]
Shrimp Scampi
Shrimp Scampi Cooking Light, OCTOBER 2003 I watched while CTM made this dish. It was so funny! I came home and the first place I go is the kitchen to put my lunchbox away and on the counter were the mise en place ingredients. (All the ingredients for the recipe in little bowls) It was funny! We tossed this with whole wheat linguine, Davinci, I think. It was good. I would use less salt, less lemon juice, and probably not cook the shrimp so long. I think putting them in the pan BEFORE the … [Read more...]
Italian Stuffed Chicken Breasts
Italian Stuffed Chicken Breasts Cooking Light, MAY 1997 Okay, so we didn't actually use CHICKEN BREASTS! We had pork chops in the freezer and stuffed those. Figure, the taste of the stuffing wouldn't change THAT much. I was right! It didn't. Being as the recipe is mainly for the stuffing anyway, I didn't think the jacket it was wearing mattered. So, 1T breadcrumbs didn't look like much to me along with the 1T Parmesan. I just didn't see how it was going to stuff our chops. I probably … [Read more...]
Halibut with White Beans in Tomato-Rosemary Broth
Halibut with White Beans in Tomato-Rosemary Broth Cooking Light, OCTOBER 2007 O M G this was FANTASTIC! I pan seared the fish and then put them in the toaster oven to keep warm and finish cooking knowing that the sauce was going to take at least 20 minutes to reduce. The only thing I would do, is possibly mash some of the beans to thicken the sauce, OR put them in at the end AFTER it has reduced. I think they got overcooked when the sauce was reducing. We tossed it over some angel hair … [Read more...]
Baked Rigatoni with Beef
Baked Rigatoni with Beef Cooking Light, APRIL 2000 While I was waiting for the potatoes to cook yesterday, I put this recipe together. I used the Francesco Rinaldi baking sauce. I can't remember the actual name, but I remember it was for baking or something like that. I looked delicious and according to CTM, my BF, it tasted good. I undercooked the pasta because it will continue to cook in the oven. I didn't make it yesterday, but assembled it so I can bake it later. Thought I'd save some … [Read more...]
