Teriyaki Pork and Vegetables with Noodles Cooking Light, NOVEMBER 2007 YUM! That's all I can say! YUM! CTM started this before I got home so it was ready WHEN I got home. He added garlic and onion to the pan as he was cooking the pork. He added more soy sauce, teriyaki sauce and more chile garlic sauce than called for. This is going to make a DELICIOUS lunch today! Ironically, the office is ordering Chinese food today but I'll have my own healthy left overs for lunch. It definitely is … [Read more...]
Rotini with Chicken, Asparagus, and Tomatoes
Rotini with Chicken, Asparagus, and Tomatoes Cooking Light, NOVEMBER 2007 NO! I didn't use aspagusting!! We omitted it from the recipe ENTIRELY! This was really good and really easy to prepare. However, I would marinate the chicken breasts before cooking. They were a little on the bland side. I would increase the basil, garlic, and the vinegar to double if not triple the amount. It was VERY filling and I can't express how easy it was to prepare. Knife Cutting board Measuring cups and … [Read more...]
Fettuccine Alfredo
Fettuccine Alfredo Cooking Light, JANUARY 2007 I wasn't sure about this recipe. I think it needs just a little more Parmesan than called for and maybe a little more milk, though. The sauce was rather thick. Or maybe just a splash of FF half and half. It was rather tasty and we served it with some LARGE shrimp that I sauteed with some garlic and olive oil. With a little salad, this meal turned out better that I thought. … [Read more...]
Turkey Tetrazzini
Turkey Tetrazzini Cooking Light, JANUARY 2003 So, we had ALL this left over turkey from Thanksgiving. It was just the two of us and the smallest bird we could find was a 12 pounder. YIKES! This was really good. The only problem was getting it out of the pan. The noodles had their own minds when it came to dishing it out even though we broke them in half. Knife Cutting board Measuring cups and spoons Nonstick skillet 13x9 baking dish Serving spoon … [Read more...]
Baked Ziti Casserole
Baked Ziti Casserole Cooking Light, OCTOBER 2007 YUM YUM and more YUM! We doubled the recipe was we had about double the ground turkey. It was our first REAL experiment with ground poulty that he wasn't all eh about. YUM! It's look weird when you're putting it together, and it was a little soupy when it came out of the oven, but that all setttled down when it was serving time. This does need a nice salad to go with it, though. The turkey didn't taste like turkey, it was nice. It cooks in the … [Read more...]
Champion Chicken Parmesan
Champion Chicken Parmesan Cooking Light, OCTOBER 2000 YUM! I LOVE chicken parm. I used jar sauce because it's make it THAT much easier to make. However, I do make my own sauce roasting whole, canned tomato ala Alton Brown. I LOVE that recipe!! Anyway, This is mighty tasty and, like I've said before I LOVE chicken parm! Knife Cutting board Measuring cups and spoons Medium saute pan 13x9 baking dish … [Read more...]
Spaghetti and Meatballs
Spaghetti and Meatballs Cooking Light, OCTOBER 2003 So, I cheated and bought jar sauce. I think we used Classico Sweet Basil or something like that. I didn't bake the meatballs, but sauteed them in a pan, but I did put them in the sauce to continue cooking while the water for the spaghetti boiled. *snort* I'm such a recipe massochist!! The meatballs were DELICIOUS, though. They were probably the best meatballs I've ever made aside from my chicken ones, which I should post some time. I also … [Read more...]
Shrimp Scampi
Shrimp Scampi Cooking Light, OCTOBER 2003 I watched while CTM made this dish. It was so funny! I came home and the first place I go is the kitchen to put my lunchbox away and on the counter were the mise en place ingredients. (All the ingredients for the recipe in little bowls) It was funny! We tossed this with whole wheat linguine, Davinci, I think. It was good. I would use less salt, less lemon juice, and probably not cook the shrimp so long. I think putting them in the pan BEFORE the … [Read more...]
