Salmon Cakes

May 6, 2012

Salmon Cakes So, I got a little bored with myrecipes.com and decided to search Pinterest for some salmon cakes.  Can I just say...it's really annoying to have 80billion people pin the same stupid thing with NO FECKIN DESCRIPTION!!  JEBUS! These intrigued me because of the hash brown usage.  I'm thinking I might alter this and make a salted cod cake recipe from it.  (Google Bacalhau) I'm also thinking Egg Beaters is not a good binder for recipes like this.  I used that … [Read more...]

Spicy Beef and Bell Pepper Stir-Fry

April 5, 2012

Spicy Beef and Bell Pepper Stir-Fry COOKING LIGHT, JUNE 2010 Just made this for dinner.  I was shopping at WalMart and they had some stir-fry beef on mark down.  It was quick.  Which is always a plus for a weeknight dinner...especially after the day I had!  UGH!I cut the strips into smaller pieces for it to cook faster.  As usual, I didn't REALLY follow all the directions.  I sauteed the beef and then removed them from the pan.  Then I added the bell … [Read more...]

Chili-Cheese Mac

March 19, 2012

Chili-Cheese Mac COOKING LIGHT, APRIL 2012 It didn't look like the picture.  I probably should have drained the meat, as it produced quite a bit of liquid.  Or cut back on the broth a bit to compensate. It was very much like Hamburger Helper.  LOL  It was good!  It was quick and easy!  I used the Weight Watchers Mexican cheese blend.  It's the only RF type of cheddar type cheese WalMart carries.  At least at my store anyway.I want it to be spicier. … [Read more...]

Spicy Shrimp Pasta

March 1, 2012

Spicy Shrimp Pasta BHG.com nomnomnom  This was YUMMY!  It was so simple, yet so very tasty!!  I bought frozen broccoli and put that in the pot of water.  When it began to boil again, I removed the broccoli and then added the pasta.  I figured they wouldn't have the same cooking time.  I kept the broccoli in the strainer and poured the pasta over the broccoli to reheat it. I also added about 1/2 cup of the pasta water to the pan with the shrimp.  The pan … [Read more...]

Louisiana Goulash

February 14, 2012

Louisiana Goulash COOKING LIGHT, MARCH 2004 TOTALLY did not follow the recipe on this one.  Something about having to wait 45 minutes for dinner on a weeknight that I don't like.  SO, with that being said, here's what we did. Cooked the rice separately.  Sauteed the celery and onion, then added the sausage.  Sauteed that for about 5 minutes or so, then added the spices, tomatoes and beans.  We let that all simmer while the rice cooked, about 15 minutes. … [Read more...]

Quick Pastitsio

January 28, 2012

Quick Pastitsio COOKING LIGHT, OCTOBER 2011 Yeah, I'm just about convinced I DO.NOT like pastitsio.  I think this is the second recipe I've tried...and nothing.  Just don't like it. It's bland.  It's dry.  It's pretty much tasteless.  This is the same family as the beef and cheese noodle bake I made a few years ago.  It has potential, but it would probably be an entirely different dish when it was finished. I won't make this again without some … [Read more...]

Fettuccine Alfredo with Bacon

January 28, 2012

Fettuccine Alfredo with Bacon COOKING LIGHT, JANUARY 2010 Yet another quick and easy meal.  After reading the ingredients and directions, I opted to include about 1 tablespoon of low fat cream cream.  In all the other Alfredo recipes I've made, there's usually some cream cheese.  It adds a level of creaminess that a straight bechamel (white sauce) doesn't usually have with Alfredos. It needs more Parmesan.  It didn't quite have that Alfredo taste to it. … [Read more...]

Steak Tips with Peppered Mushroom Gravy

January 28, 2012

Steak Tips with Peppered Mushroom Gravy COOKING LIGHT, JANUARY 2010Being as we're both working days now, I've been looking at quick and easy meals to make.  At least that's what I did this week.  Yes, this was quick and easy.  It was really tasty too!!  I tried really hard NOT to overcook the tips so they were chewy.  It wasn't easy to do....and I didn't have the pan hot enough so they just browned.  *sigh*  Make sure the pan it hot enough to … [Read more...]
