Dal with Ghee Cumin and Mustard Seeds

December 30, 2008

Dal with Ghee, Cumin, and Mustard Seeds Cooking Light, January 2007 I made this recipe over a year ago and realized it wasn't on here. I LOVE this recipe. The taste of the ghee adds a nutty, buttery taste that really ties the dish together. Don't over cook the dal though or else it will become a paste. Start checking them about 15 minutes before the end of the cooking time to make sure they don't get too done. This is great and very filling by itself. I threw a few chicken breasts to … [Read more...]

Chicken Cacciatore

April 17, 2008

Chicken Cacciatore Cooking Light, JANUARY 1995 I put this in the crockpot and used all chicken thighs. We had it last night for dinner. The sauce was a little on the runny side. I might drain the tomatoes next time and add some sauce to make it more saucier. It was rather tasty, though! We had whole wheat angel hair with it. Knife Cutting board Measuring cups and spoons Nonstick skillet Crockpot Wooden spoon Large saucepan … [Read more...]

Barbecued-Beef Sandwiches

April 11, 2008

Barbecued-Beef Sandwiches Cooking Light, September 1999 So, it all depends on the barbecue sauce, obviously. The only stuff I had on hand that I could think of was this chocolate barbecue sauce. It didn't taste like chocolate, obviously, but it was more sweet than I think CTM would have liked. I liked it. I thought it was really good, but a little on the sweet side. I threw it all in the crock pot and allowed it to cook while we were running errands on Saturday. Oh, and making cole slaw with … [Read more...]

Pork Chops with Country Gravy

January 14, 2008

Pork Chops with Country Gravy Cooking Light, JUNE 2006 Oops. Forgot to update these. I've made them before. They're really good. This time I followed the directions for the gravy. *snort* It actually was a little too thick and needed to be thinned out a bit. They were YUMMY with mashed taters!! I had them for lunch yesterday. Measuring cups and spoons Plate for dredging Large nonstick skillet Spatula Whisk … [Read more...]

Yankee Pot Roast

January 2, 2008

Root vegetables add a touch of sweetness to this savory Yankee Pot Roast stew. Yankee cooks traditionally add the vegetables partway through the cooking process, which helps keep them from breaking down

Yankee Pot Roast Cooking Light, OCTOBER 2007 Meh. It's pot roast. I liked the addition of parnips to this, but I didn't do any of the other interesting root veggies. Just onions, potatoes, carrots, and the parnips. They are REALLY sweet when cooked, if you haven't tried them before. If you roast them, they're like candy. Dutch oven Knife Cutting board Measuring cups and spoons … [Read more...]

Italian Sausage with Three Peppers

October 24, 2007

Italian Turkey Sausage with Three Peppers Cooking Light, NOVEMBER 2004 As usual, I didn't follow the directions on this recipe. We used regular Italian sausage instead of the turkey kind. It just didn't look appetizing! I don't think you can screw this up and it's gonna taste just like you think it will. We topped it with marinara and served it on whole wheat buns. It was GOOD! Measuring cups and spoons Knife Cutting board Saute pan. … [Read more...]

Baked Rigatoni with Beef

September 28, 2007

Baked Rigatoni with Beef Cooking Light, APRIL 2000 While I was waiting for the potatoes to cook yesterday, I put this recipe together. I used the Francesco Rinaldi baking sauce. I can't remember the actual name, but I remember it was for baking or something like that. I looked delicious and according to CTM, my BF, it tasted good. I undercooked the pasta because it will continue to cook in the oven. I didn't make it yesterday, but assembled it so I can bake it later. Thought I'd save some time. … [Read more...]
