Cilantro-Lime Chicken with Avocado Salsa recipe Cooking Light, April 2009 I hate cilantro, so I didn't use any. I just marinated the chicken in the lime juice. I could taste a little of the lime, but not much. Next time I may put some of the rind in with the chicken to marinate. The salsa was good. I wanted it to have more lime taste to it. I made some cumin rice to serve with it. I would, however, use crushed pineapple in juice instead of the chunk. The chunks were just too big.
