Barbecue Pulled Chicken

November 15, 2009

Barbecue Pulled Chicken recipe EatingWell: February/March 2006 I had such high hopes for this recipe. The sauce just didn't taste like barbecue sauce. It needed some salt. I usually don't cook with it, but this recipe really could have used it. The sauce needs to be thickened, so I would add some tomato paste at the end to make it thicker. It wasn't sweet, so I would add some brown sugar. I probably would make it with ketchup instead of the tomato sauce. Yeah, it just didn't taste all that … [Read more...]

Skillet Chicken Souvlaki

August 8, 2009

Skillet Chicken Souvlaki recipe Cooking Light, August 2009 Using my experience with the chicken, peppers and cashews recipe, I butterflied the breasts and then thinly sliced them. Worked like a charm! There weren't huge slices of chicken in the recipe. The chicken was a little bland. I would marinate it again in some Greek dressing or at least some lemon and oregano before making this again. It came together really easy and was pretty good. The sauce...was interesting. I'd never had Greek … [Read more...]

Greek Steak Pitas

June 8, 2009

Greek Steak Pitas recipe Cooking Light, June 2009 So, I forgot to buy spinach. Maybe it was a subconscious thing as I'm not too fond of sauteed fresh spinach. We used london broil instead of flank steak. I tried to cut it supah thin so it wouldn't be so tough to eat. Can I just say, the pita bread you get in the store sxaz and is NOTHING like the pita bread you get when you order out. It's so hard NOT to tear the stupid things when you're splitting them and then they fall all apart when you're … [Read more...]

Chipotle Sloppy Joes

May 7, 2009

Chipotle Sloppy Joes recipe Cooking Light, April 2009 O M G these were FABULOUS! Since you only use one chili out of the can, you can make several batches of these. I put the rest of the chilis in the freezer for later use. One wasn't too spicy at first, but heated up for lunch today they were sort of spicy, so watch out for that if you intend to have these as left overs. They were super easy to make and MUCH better than regular sloppy joes. I may just retire that recipe and use this one … [Read more...]

Barbecued-Beef Sandwiches

April 11, 2008

Barbecued-Beef Sandwiches Cooking Light, September 1999 So, it all depends on the barbecue sauce, obviously. The only stuff I had on hand that I could think of was this chocolate barbecue sauce. It didn't taste like chocolate, obviously, but it was more sweet than I think CTM would have liked. I liked it. I thought it was really good, but a little on the sweet side. I threw it all in the crock pot and allowed it to cook while we were running errands on Saturday. Oh, and making cole slaw with … [Read more...]

Sloppy Joes

December 28, 2007

Sloppy Joes Cooking Light, JANUARY 2004 YUM! That's all I can say about this recipe. These were YUM-MY! The sauce was just sweet and tart enough, the veggies made it healthy, and we used the newly found whole wheat potato rolls. It made for a DELISH lunch the next day, too. DEFINITELY on the make again list!! Knife Cutting board Measuring cups and spoons Non-stick skillet Wooden spoon … [Read more...]
