Spring Seafood Stew

October 6, 2009

Spring Seafood Stew recipe Cooking Light, May 2002 I had a few scallops, a piece of halibut, and bought some shrimp to make this. I didn't use all the seafood listed in the ingredients. I needed something that would use up the bits and pieces of seafood I had in the freezer and this seemed perfect. This was REALLY good!! It was also really easy to make. It was even good for lunch the next day. I saved the shrimp shells and put them in a measuring cup with some water and heated it up in the … [Read more...]

Seared Scallops over Bacon and Spinach Salad with Cider Vinaigrette

September 6, 2009

Seared Scallops over Bacon and Spinach Salad recipe Cooking Light, March 2008 I'm on the fence about this dish. I liked the salad. I liked the scallops. I don't think I liked them both together. The bacon, cider vinaigrette, and spinach didn't really go with the curry powdered scallops. At least I didn't think they did. I really liked the salad!! It reminded me of one we used to have when I was growing up. I had the left over salad the next day with a chopped egg in there. That was really good … [Read more...]

Seared Scallops with Lemon Orzo

August 22, 2009

Seared Scallops with Lemon Orzo recipe Cooking Light, July 2007 This was pretty simple and good. I splurged this week and bought some frozen sea scallops from BJs weekend before last. YUM! The lemon orzo was interesting. It was definitely lemon-y! It was simple and I'm not quite sure what the chives add to the dish. I would have thought oregano or something like that. Maybe sage? Chives? I didn't get the chives. The scallops are good enough on their own and this orzo is just a nice … [Read more...]

Bacon Wrapped Scallops with Spicy Mayo

December 25, 2008

Bacon Wrapped Scallops with Spicy Mayo Recipe courtesy Tyler Florence Even though we're rather close to water, we don't get fresh scallops on this area. I'd have to drive to DC to get them. That being said, the guy at Giant told us that this particular pack of frozen sea scallops would be better than the "fresh" ones that were in their seafood case. They were. I was quite surprised!! We thawed them IN THE BAG in cold water for about an hour and then put them in the fridge to thaw the rest of … [Read more...]
