Stir-Fried Shrimp with Garlic and Chile Sauce recipe Cooking Light, January 2009 This was REALLY quick to make. I started the garlic ginger rice in the rice cooker when I got home and then headed to the fitness center. When I got home, the rice was finished and I prepared the ingredients for the shrimp. I think it was a total of about 15 minutes form prep to dinner time. We didn't have the green onions for some reason. I guess I thought we had some in the fridge, but other than that … [Read more...]
Baked Shrimp with Feta
Baked Shrimp with Feta recipe Cooking Light, April 2009 This was REALLY good and REALLY easy to make!! I didn't have white wine, so I just used the clam juice instead. It made it a little more juicy, but I let it simmer a little longer so it wasn't so watery. However, if you're serving it over pasta, then you may want to keep the juice. The only thing I would do, is to add fresh oregano instead of dried. I couldn't really taste the oregano in the dish. This is on the list to make again!! … [Read more...]
Lemon Pepper Shrimp Scampi
Lemon Pepper Shrimp Scampi recipe Cooking Light, MARCH 2009 NEEDS MORE LEMON! I could BARELY taste the lemon in this recipe. Add some zest or more juice to the shrimp. I don't think there was enough pepper either. It was good and easy. We'll probably make it again with those adjustments. I couldn't find orzo so I served it with mini fusili. It was pretty good. Measuring cups and spoons Knife Cutting board Large non stick skillet Saucepan for pasta … [Read more...]
Stir-Fried Shrimp with Garlic and Chile Sauce
Stir-Fried Shrimp with Garlic and Chile Sauce Cooking Light, JANUARY 2009 This was pretty good. I had the sweet Thai style chili sauce, which made it interesting. The vinegar and the sweet sauce made it a little sweet and sour. I doubled the sauce and only had 1 pound of shrimp, so there were no left overs for lunch. I added some sugar snap peas to the mixture when it was done cooking. I steamed them in the microwave before adding them, too. That with some rice made for a very filling meal. … [Read more...]
Stir-Fried Shrimp with Spicy Orange Sauce
Stir-Fried Shrimp with Spicy Orange Sauce Cooking Light, August 2007 This was really yummy and very orange-y. Being as I usually don't stick to the recipe, I added a bag of oriental veggie mix from Green Giant or something like that and a can of mandarin oranges. Don't add the oranges until the very end as they totally disintegrated and was just pulp in the sauce. I also used sweet chili paste. I probably would have a different taste if you used the regular chili paste. We served it over … [Read more...]
Lemon Basil Shrimp and Pasta
Lemon Basil Shrimp and Pasta Cooking Light, April 2007 So, this is the second recipe that called for cooking the shrimp with the pasta. I don't like that. We sauteed the shrimp with the spinach and lemon juice then tossed everything in a bowl. It was interesting... The combination of the capers and the spinach made a mustard taste for me. It was definitely different. We used angel hair pasta which might have made a difference in the result. I don't know that I'd make this again. Measuring … [Read more...]
Shrimp and Broccoli Stir-Fry
Shrimp and Broccoli Stir-Fry Cooking Light, January 2008 This was mighty yummy except for the vinegar in the recipe. It was a little too powerful for our taste. I would but it in half and add more soy sauce. Of course, we use tamari soy sauce which tastes MUCH better than the regular stuff. I'm pretty sure we'll be making this again. Measuring cups and spoons Knife Cutting board Large nonstick pan or wok pan … [Read more...]
Creamy Cajun Shrimp Linguine
Creamy Cajun Shrimp Linguine Cooking Light, September 2006 Okay so when I got home CTM was like, "Um...did you read these directions?" "No, why?" "They're weird." He was right, they were weird. You boil the water the stock, add the pasta and shrimp and then simmer everything. I didn't like that. We added the stock to the pan, then enough water to boil the linguine. We cooked the mushrooms till brown, added the red peppers and cooked until soft, then added the shrimp. It worked out better … [Read more...]
