Crispy Berbere Pork Chops

February 28, 2013

Crispy Berbere Pork Chops

This started out to have a REALLY SUPAH DUPAH long name. Cornflake Crusted African Spiced Pork Chops. Yeah...too long. S said, "That's a mouthful!" LOL So, I figured I'd shorten it a bit. Make it a little more user friendly.  Crispy Berbere Pork Chops.  Short, simple, sweet and to the point.  Just like me, well except for the short part.  But S would argue the short part...   Berbere.  If you haven't made it before, and you like spicy food, I would suggest you … [Read more...]

What do you mean guacamole isn’t a paste?

February 22, 2013

So, after doing a nice Google search on authentic guacamole, I came across this, this, and this.  NONE of which are paste.  In fact, the first one made me laugh: "Put the blender away, far away. Real guacamole should never be pureed to mush. It should be chunky." I mean, how much simpler can it be?  It's like salad.  You wouldn't mash the lettuce into a pulp would you?  I sure wouldn't!  Maybe you like your salad a morhphous blob.  I like to see all the … [Read more...]

Caribbean Rice

April 22, 2009

Caribbean Rice recipe Cooking Light, November 2002 I've never cooked rice with coconut milk. CTM doesn't like coconut so I've always been weary. This is one of those, I had a recipe and thought about following it but didn't really, dishes. I used 1 1/2 cups of chicken stock and 1/2 cup of coconut milk. Don't. The rice is really sticky. Use either the recipe allotted mix or 2 cups of chicken stock and 1/2 cup of coconut milk or some variation there of. It was creamy, but sticky. So, I had the … [Read more...]

Greek Salad with Feta and Olives

April 21, 2009

Greek Salad with Feta and Olives recipe Cooking Light, April 1996 I didn't add the lettuce or the escarole. C'est la vie! I wanted the salad to marinate a bit before we ate it and the lettuce would have just wilted. Besides, I wanted to be able to take left overs for lunch. I have a hard time paying $4 for a jar of kalamata olives, so I used jumbo California black olives. It probably would have been better with the kalamata, but we didn't go to the Shoppers that had the olive bar. I didn't use … [Read more...]

Spinach with Chili Oil

March 10, 2009

Spinach with Chili Oil recipe Cooking Light, OCTOBER 1995 I keep trying and trying to eat spinach. I know it's good for me. It leaves the STRANGEST feeling on my tongue when I'm done eating it though. I have no clue what that's about. This was okay. I didn't find chili oil, so I toasted some red chili flakes in the oil before adding the garlic and spinach. Meh, it was spinach. Measuring spoons Knife Cutting board Large nonstick skillet … [Read more...]
