Mushroom-Chive Pilaf

February 18, 2009

Mushroom-Chive Pilaf recipe Cooking Light, OCTOBER 1997 YUM! This was easy to make and VERY tasty!! I didn't put the mushrooms in at the end. I sauteed them with the onion and garlic, then added the broth and rice. I forgot the chives, though. It was yummy just with the shrooms though! Measuring cups and spoons Knife Cutting boar Large saucepan Wooden spoon … [Read more...]

Onion Rice Pilaf

January 6, 2009

Onion Rice Pilaf Southern Living, NOVEMBER 2004 I'm soooooooooo guilty of not reading the directions. I got the part where you're supposed to bake the rice and said, "Who in the hell bakes rice??" I didn't do that. I cooked it on the stove. It was pretty good, but somewhat bland. I even added some rosemary to it and it still was a little on the bland side. It's an easy recipe to doctor though. I followed standard rice cooking recipes to finish the dish. Bring to a boil, cover and simmer 30 … [Read more...]

Quick Buttermilk Corn Bread

December 28, 2008

Quick Buttermilk Corn Bread Cooking Light, January 2004 This was really crumbly and needed some sugar...more than what I already added to the batter. I added 2 T of sugar (not splenda) to the batter because I like my cornbread a little on the sweet side. I hated the cast iron pan in the oven before pouring the batter in. It was really crumbly in the middle, even though the knife came out clean. I'm not sure why that was. It was cornbread. Not something I'd really write home about, but it was … [Read more...]

Caesar Salad

December 28, 2008

Caesar Salad Cooking Light, October 2003 We didn't use egg substitute. We used two egg yolks. It wasn't as creamy as I thought it should be. Next time I might use three egg yolks. It was pretty good, though. I think it could use a little garlic and will probably add some next time. Measuring cups and spoons Blender or cuisinart (I used our baby cuisi) … [Read more...]

Pit Fired Ham Glazed with Pineapple and Mango Maple Syrup

December 23, 2008

Pit Fired Ham Glazed with Pineapple and Mango Maple Syrup Recipe courtesy Chef Jill Davie I'm not normally a fan of the sweet and savory type dishes. No apples and pork, no hawaiian pizza, nothing like that. This was pretty good though!! We couldn't find a mango sauce so we used a mango jelly from the international foods isle. We blended the jelly, pineapple chunks, and the maple syrup and then cooked it a little longer in the pan before basting the ham with it. It turned out pretty good!! I … [Read more...]

Creamed Spinach

November 9, 2008

Creamed Spinach Cooking Light, NOVEMBER 2005 This was okay. I don't think my stomach liked it all that much, though. Not that it tasted bad, but there might have been something with the lowfat cream cheese that I used that didn't sit well with me. It doesn't look like it's going to be creamy until you add the cream cheese and then it looks too thick. I added a little bit of milk to make it more the consistency of creamed spinach that we're used to. I also added some Parmesan cheese to make it … [Read more...]

Rice Pilaf with Shallots and Parmesan

October 23, 2008

Rice Pilaf with Shallots and Parmesan Cooking Light, December 2003 I doubled this recipe so we would have some for left overs the next day. It's a pilaf. It's easy to make. I added some orzo to make it more like rice a roni type pilaf. I always add that when I'm making a pilaf. We didn't use parmesan but asiago instead. I didn't feel like opening up the new package of parm when the asiago was already opened. The cheese just kind of melted on the rice. Maybe it would have been a little different … [Read more...]

Broccoli with Red Pepper Flakes and Toasted Garlic

October 12, 2008

Broccoli with Red Pepper Flakes and Toasted Garlic Cooking Light, March 2007 So, we don't really have a lid big enough to fit the LARGE nonstick pan. It's on the list of things to get next time we go shopping. This wasn't really garlicky and not that spicy. Next time, I think we'll add the garlic and pepper to the pan first then add the broccoli and then the water. I think that will make for better garlic and spicy flavor. It was still really good. You can follow the same recipe and then add … [Read more...]
