Broccoli with Red Pepper Flakes and Toasted Garlic

October 12, 2008

Broccoli with Red Pepper Flakes and Toasted Garlic Cooking Light, March 2007 So, we don't really have a lid big enough to fit the LARGE nonstick pan. It's on the list of things to get next time we go shopping. This wasn't really garlicky and not that spicy. Next time, I think we'll add the garlic and pepper to the pan first then add the broccoli and then the water. I think that will make for better garlic and spicy flavor. It was still really good. You can follow the same recipe and then add … [Read more...]

Mashed Potatoes with Chives

September 28, 2008

Mashed Potatoes with Chives Cooking Light, August 2005   Meh, they're mashed potatoes with chives. Good mashed potatoes none the less. I always use kitchen shears or scissors to cut the chives. It's easier than using a knife. Knife Cutting board Measuring cups and spoons Pot Strainer Hand mixer Scissors … [Read more...]

Wild Mushroom Risotto

September 22, 2008

Wild Mushroom Risotto Cooking Light, September 2001 So, for some reason that Giant we NOW go to doesn't have porcini mushrooms. I should see if Penzey's does and just order some from them. I can't believe they don't carry them!! There's several recipes I make that calls for them. They really add an earthy, mushroom taste. So, I'm convinced this recipe COULD HAVE been better than it was. I substituted baby bellas to make up the difference and they just didn't cut it. Not that it tasted bad. I … [Read more...]

Spicy Peanut Sauce

July 14, 2008

Spicy Peanut Sauce Cooking Light, May 1996 Very VERY lime-y. I think I would cut the lime juice to 1/4 cup and use chicken stock for the rest to make up the difference. I tossed it with linguine, chopped green onions and some chopped peanuts. zit went very well with our teriyako marinated london broil and sugar snap peas. Measuring cups and spoons Whisk Small mixing bowl … [Read more...]

Mango and Black Bean Salad

June 9, 2008

Mango and Black Bean Salad Cooking Light, March 2008 So, I'm not really sure WHAT the tomatillo salsa does for this recipe. I may try it with regular salsa next time and see if that makes a difference. The mangoes were UBER ripe and tasted almost as sweet as candy!! I don't think there was enough of them in the mix, though. I did add some jalapeno chopped up in the mix to make it more like a salsa than a salad and I omitted the rice. Just not sure what that was for, either. I think next time, … [Read more...]

Orzo, Corn, and Roasted Bell Pepper Salad

April 9, 2008

Orzo, Corn, and Roasted Bell Pepper Salad Cooking Light, July 2005 True to form, I didn't really follow the recipe. I THOUGHT I had roasted peppers in the fridge, but I didn't. CTM found this corn southwestern style mix by Birdseye, so I used that instead. I had orzo prepared from the night before, tossed it with the veggies that I heated in the microwave, and then chopped up a chipotle to make it match the fish we were having. It was DELICIOUS!! I had a little bit of it for lunch the next day. … [Read more...]

Risotto with Mushrooms and Parmesan

April 8, 2008

Risotto with Mushrooms and Parmesan Cooking Light, December 2002 YUM! Risotto is ALWAYS good. I don't think I've had a bad one yet, but then again, I haven't tasted the ones from Hell's Kitchen. *snort* I'd definitely make this one again. Knife Cutting board Measuring cups and spoons Medium saucepan for broth Large saucepan for risotto Wooden spoon Ladle … [Read more...]
