Sandy Spinach and Squash Stars (or 4S Cookies for short)

October 29, 2012

I said I was going to bake myself into oblivion... I pass by those "gourmet" dog cookies at PetSmart all the time and think, "I'm a baker.  How hard can it be?"  Well, if you're a baker, it's not.  Actually, if you're NOT a baker it's not. I actually did my research this time.  I didn't find any ONE recipe that I really wanted to make.  For some reason, I was stuck on spinach.  And, well, I had pumpkin left over from the chai cream cheese glazed pumpkin … [Read more...]

Spinach Risotto with Shrimp and Goat Cheese

November 15, 2009

Spinach Risotto with Shrimp and Goat Cheese recipe Cooking Light MAY 2009I didn't like this at all. I think it was the goat cheese part that I didn't really like. I normally like goat cheese, but for some reason this recipe didn't do it justice. I was more interested in the risotto with the spinach and the shrimp. Next time I make this I'll probably use parmesan or maybe asiago Measuring cups and spoons Knife Cutting board Two saucepans Wooden spoon … [Read more...]

Seared Scallops over Bacon and Spinach Salad with Cider Vinaigrette

September 6, 2009

Seared Scallops over Bacon and Spinach Salad recipe Cooking Light, March 2008 I'm on the fence about this dish. I liked the salad. I liked the scallops. I don't think I liked them both together. The bacon, cider vinaigrette, and spinach didn't really go with the curry powdered scallops. At least I didn't think they did. I really liked the salad!! It reminded me of one we used to have when I was growing up. I had the left over salad the next day with a chopped egg in there. That was really good … [Read more...]

Pork Chops Stuffed with Feta and Spinach

June 21, 2009

Pork Chops Stuffed with Feta and Spinach recipe Cooking Light, April 2007 Yum. These were...YUM! We didn't broil them. We pan fried them. Every time we use the broiler, the fire alarm goes off, so I try not to use it all that much. The filling was very tasty and lemony. I liked it!! I couldn't, however, taste much of the sun dried tomatoes. I may try to reconstitute them next time we make these. I'm sure we will make these again as they were supah easy and very good. Measuring cups and … [Read more...]

Spinach with Chili Oil

March 10, 2009

Spinach with Chili Oil recipe Cooking Light, OCTOBER 1995 I keep trying and trying to eat spinach. I know it's good for me. It leaves the STRANGEST feeling on my tongue when I'm done eating it though. I have no clue what that's about. This was okay. I didn't find chili oil, so I toasted some red chili flakes in the oil before adding the garlic and spinach. Meh, it was spinach. Measuring spoons Knife Cutting board Large nonstick skillet … [Read more...]
