Triple-Chocolate Cheesecake

COOKING LIGHT, APRIL 1996

For Christmas I asked for a spring form pan.  Yes, I ask for kitchen shit for Christmas, Birthdays, etc.  *I* am a kitchen hoor!!  Obviously, I got one.  *happy dancing*  So, now come the experiments with cheesecake.  This being my second one, but first one with the right tool!  :DI made the crust too thick and cooked it too long.  The sides were REALLY crunchy.  I used chocolate graham crackers.  *misses chocolate Nilla wafers*  They’re not a bad substitute.  I was looking for the Oreo crumbs?  But couldn’t find them.

I think I overcooked the cake.  It was a little dryer than I thought?  But that could be because it’s lowfat and not full fat.  I might experiment with a regular cheesecake recipe to see if that’s the case.  The “until set” part is a bit confusing to me.  I’m sure we will enjoy tasting all my experiments.

This was tasty!  Very chocolatey!  S didn’t like the sour cream topping.  He’s funny with sour cream that way.  It was rather tangy.  I’m not sure it did much to enhance the cheesecake so if I make this one again, I won’t use that.  We had FF chocolate topping, so used that.  I would like to find the FF hot fudge and try it with that to see if it’s any better.

Knowing what I know after my first experiment, I will probably make this again or some variation of it.
