Wild Mushroom Risotto

So, for some reason that Giant we NOW go to doesn’t have porcini mushrooms. I should see if Penzey’s does and just order some from them. I can’t believe they don’t carry them!! There’s several recipes I make that calls for them. They really add an earthy, mushroom taste. So, I’m convinced this recipe COULD HAVE been better than it was. I substituted baby bellas to make up the difference and they just didn’t cut it. Not that it tasted bad. I mean, seriously, HOW can risotto taste bad?

    They *just* don’t sell them?!?! That’s pathetic.

    We, too, use them in lots of dishes!

    Ours are usually dried to and you can NORMALLY find them by the shallots, but I asked and they don’t carry them any more at the new store we’re shopping at. Guess I’ll have to stock up next time we go to the other store…

    Porcini’s to me are as hard to find as shallots. Ours are usually dried, made by Melissa’s (or should I say packaged). They hang somewhere between the regular mushrooms, or are by the bottled ginger, garlic, and shallots.
