Meh. It’s pot roast. I liked the addition of parnips to this, but I didn’t do any of the other interesting root veggies. Just onions, potatoes, carrots, and the parnips. They are REALLY sweet when cooked, if you haven’t tried them before. If you roast them, they’re like candy.
