This stemmed from this recipe.  I.LOVE.THIS.RECIPE!  I’ve made it numerous times since the first time almost 2 years ago.  Sadly, it’s one that I have to reserve for Sundays because of the all the ingredients, the length of time it takes to make, and it has to simmer for so long.  It’s just not a weeknight meal.  But I DESPERATELY wanted to make it a weeknight meal.  So…I did!

 

It was a welcome meal this week, too.  Something hearty and tasty.  I had some really LONG days this week.  AND I get to look forward to doing this all again at the end of June for quarter close.  YIPEE.

I do.  I really do.  I love that we help put bad guys away ALL OVER THE WORLD!  It just makes the day to day frustrations and stress worth it when I log in and see what good things we have done while I was sleeping.

Okay…can I just say WHAT IS WRONG WITH PEOPLE??  On the way home yesterday, some dude in an SUV decided to occupy the space I was in.  So, I honked my horn to let him know I was where he wanted to be.  I changed lanes to go around said JA.

Do you know.  He decided to match my speed, roll down his window and scream stuff at me?  What did he say?  I have no idea.  I was concentrating on the task at hand…DRIVING!  I did flip him the perpetual bird, but I never took my eyes off the road.  Which is more than I can say for MOST of the people we encounter on the way home.

 

Seriously.  WTF gives you the right and justification for screaming at me after I had to slam on my brakes to keep from hitting you?  And simply because you put your turn signal on doesn’t mean I have to stop and let you in.  Per the VA DMV driver’s manual:

 

Changing Lanes (page 16)

 

Before changing lanes, check your side and rear view mirrors for traffic approaching you from behind. Then, use your turn signal to let other drivers know you plan to change lanes. Check for other drivers who also may be moving into the same lane. Just before you begin moving into the other lane, quickly glance over your shoulder and check for any vehicles that may be in your blind spot.

 

Whether you are changing lanes, passing, entering or exiting a highway, always use your turn signals and check traffic to the rear and sides. When driving on a multi-lane highway, stay in the right lane if you are driving slower than the traffic around you.

 

Yeah, that last line cracks me up.  While I totally get that you’ve purchased a “green” vehicle and that for some strange reason you’re still allowed to occupy the HOV lanes, but seriously, if people are passing you on the right… GET OVER!  I don’t care that you’re trying to get 100 miles to that gallon of gas.  MOVE OVER!  Don’t force me to pass you on the right because there’s 3 football fields of distance between you and the car in front of you.  Just because you CAN drive in that lane doesn’t mean you SHOULD drive in that lane.

 

And whatever you do, DO NOT get out of your car, approach mine and start yelling at me because you cut me off on your left hand turn on a yellow light when I OBVIOUSLY had the right of way turning RIGHT at that intersection.  Because I WILL call 911 on you arse!!

 

Seriously.  WHAT IS WRONG WITH PEOPLE WHEN THEY GET BEHIND THE WHEEL OF CAR??  They’re no longer human beings at that point.  I have NEVER done these things to ANYONE.  Flip people off?  Yes!  Holler at them while in my car with the windows up?  Yes!  Windows down?  Only if it’s nice out.  But I’ve never matched speeds with anyone JUST so I can berate them while they are driver, thus driving while distracted.

 

And while I’m ranting, can someone invent a scrambler for while you’re in your car?  So you can’t use it AT ALL?  I see an INSAGN amount of people no long talking on their phone, but texting, reading, and lord knows what else WHILE DRIVING!  Just put it down.  It can wait.  Seriously.  It can.

Trim pork of any additional fat and cut into bite-sized pieces.  Add paprika and stir to combine; making sure all pieces of pork are coated in paprika.

Add green bell peppers and sauté 4 minutes.  Add mushrooms and continue cooking 5 more minutes or until all juices have evaporated.  Remove from pan and keep warm.

Coat the pan with more cooking spray and add the pork mixture.  Brown on all sides.

 

Weeknight Hungarian Goulash

 

Add the beer making sure to loosen any browned bits from the bottom of the pan.
Reduce heat, add the mushrooms, peppers, and tomato paste.  Simmer for 15 to 20 minutes or until the pork is cooked through.

Combine water and cornstarch in a small bowl with a whisk.  Add to the pork mixture and continue simmering until thick.
