I was wandering around on Pinterest the other day and I saw a sticky chicken recipe. Well, I saw the photo of a sticky chicken recipe. Then I saw a few others, Asian, Thai, Chinese. Then it occurred to me, why not Indian? Why not Indian? Thatโs when I decided to make Indian Sticky Chicken Lettuce Wraps. And Iโm glad I did. They were delicious! And different! They were deliciously different! And made in the slow cooker, so they were super simple and ready when we got home. You canโt beat that, can you?
Well, the only way you could beat that is if someone else made it and paid for it. Donโt get me wrong, these aren’t expensive to make. AT ALL! You probably have all but maybe two ingredients already in your kitchen. You may not have garam masala. If youโre a foodie you should. If you call yourself a foodie and you donโt, then shame on you. Okay, before I said this, I apologize if I insult any foodies from India. But, I see garam masala as the taco seasoning of Indian cooking. Itโs as varied as recipes for taco seasoning and almost every family has their own version.

Okay. Confession. I have never made lettuce wraps before. Ever. I donโt know why not. I love eating them at P.F.Changโs. So, I donโt know why I havenโt made them before. Theyโre not really all that difficult either! And since I’ve made these, the possibilities are endless. Countless variations, methods, styles, you name it! Why havenโt I made these before now? Who knows? All I know is, youโre probably going to see a few more variations in the future.

And thatโs how my plate looked. You have some nice, brown rice, some golden zucchini, the chicken, and the lettuce. How healthy delicious does that look? It truly was tasty! The spicy garam masala offset by the sweet and the sour. The crisp, cool lettuce, the rice, the sweet zucchini all enhanced the flavors in the chicken. It was scrumptious!! If I do say so myself!

You see? A little rice, zucchini, chicken in some lettuce and you’ve got yourself a nice tasty dinner, or even a yummy appetizer for a dinner party. I liked them for dinner. Small bites meals you eat less and fill up faster. After eating that plate, I was stuffed!! And it honestly wasn’t all that much food, but having to take smaller bites and taking time to assemble the wraps meant I was full after eating dinner.
So, get yourself some garama masala or make some. Thereโs a ton of recipes out there showing you how to make it. And you can make your own blend, while youโre at it! Mine? A little heavier on the cumin and star anise side, I think. Maybe Iโll whip some up and share that with yโall, too!

Indian Sticky Chicken Lettuce Wraps
Get ready to drool with these Indian Sticky Chicken Lettuce Wraps! Tasty, healthy, and a perfect dish for those hot summer days.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons brown sugar
- 2 tablespoons Splenda
- 2 tablespoons low sodium soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons lime juice
- 2 tablespoons garam masala
- 1/2 cup light coconut milk
- 1/4 cup ketchup
- 2 cups brown rice
- 1 head iceberg lettuce
Instructions
- Place the chicken breasts in the liner of a slow cooker coated with cooking spray.
- Combine the next eight ingredients (brown sugar through ketchup) in a small mixing bowl. Pour over the chicken breasts and cook on low 8 to 10 hours or until the chicken is cooked through and fork tender. Remove the chicken and shred with two forks.
- Place 1/2 cup rice on each of four plates. Place four ounces chicken on each plate and a stack of lettuce leaves. Garnish with lime wedges.
