Fresh Florida Salsa!

Recently, it was doing this outside:

Granted, this was mild compared to other parts of the country, but  it’s pretty cold for this part of town.  I had to dress like an Eskimo to walk Missy in the mornings.  Even with two pairs of gloves on, my fingers were still cold when we got back home.  It’s just been colder than cold here.

Temperatures this low explains why so many go to Florida for Winter vacations.  I know my dad and step-mom were there around the Holidays.  Of course, to Dad, anything below 60 is below freezing.

Even with these colder temperatures in Florida, they are still able to grow a wide variety of healthy fruits and vegetables throughout the year.  Avocados, broccoli, cabbage, carrots, cauliflower, celery, corn, cucumbers, eggplant (or aubergine for people like me who don’t like the word eggplant), grapefruit, mushrooms, okra, onions, oranges, potatoes, radishes, squash, strawberries, and tomatoes, just to name a few, are currently in season in Florida RIGHT NOW!  Amazing.  I know!  We were sitting at 3 F here in the mid-Atlantic region and they’re snacking on salsa.  And no not that “New York City” kind of salsa.  FRESH salsa.  Like this one:

Fresh from Florida has a delicious recipe for Florida Corn, Tomato and Avocado Salsa.  It incorporates some of the tasty and deliciously fresh produce that is in season in Florida.  Go figure!  Funny how that works out.  They’re launching a campaign that shows people how easy it is to eat healthy fruits and vegetables YEAR ROUND!  I know how wonderful it is for me to walk into the grocery store and see a beautiful array of colors in the produce section.  Just makes me drool!  That’s all thanks to Florida produce.

Perusing through the Fresh From Florida they have the most delicious looking salads, starters, and even some fabulous looking entrees and sides!  And don’t get me started on their desserts.  YUM!  If you haven’t been to their website, you really should check it out.  There are some really great recipes and content there.

But, I know you’re here for the recipes, so I’ll get right to their Florida Corn, Tomato and Avocado Salsa recipe.  Seriously.  Doesn’t that just look sunny and warm??  And let me tell you how delicious it was!  S was counting the minutes until I was done with my photo shoot so he could dive right into this tasty and heart healthy, game day snack.
