I received a bag of this interesting grape flour from White Lily. Of course, I thought of a baking staple which to me is banana bread. It’s forgiving if the flour is difficult to work with. Thankfully, this moist grape flour banana bread turned out amazing. I can’t wait to bake a few more things with this fun flour.

Instructions for Making This Banana Bread Recipe

Preheat your oven to 350°F and grease loaf pan so they’re ready when you are. Combine the butter with the sugar and beat until creamed. Add the eggs one at a time making sure to stir after each one. Stir in the vanilla extract and yogurt until combined. Finish up the wet ingredients by mashing and stirring in the bananas.

Combine the dry ingredients in a large mixing bowl and stir with a whisk until combined and no lumps are visible. Make a well in the center of your dry ingredients and pour in the wet ingredients. Stir until most of the ingredients are combined but not complete. Let the batter sit for about 5 minutes and then give one or two more stirs before pouring into your prepared loaf pan.

This banana bread is fabulous!! I am convinced it’s the flour. I made sure there was enough liquid to compensate for the grape and wheat flours. So, it’s more than moist!! And since there’s whole wheat flour, it’s a great mid-morning or afternoon snack. I was even eating it as a sweet nibble after lunch. It is THAT good.

Honestly, just look at it!! Even after a week, it is still moist and delicious. You can’t go wrong with this recipe. If you can’t find grape flour, you can use more whole wheat or all-purpose flour in its place. Or try some oat flour!

- 1/2 cup butter, melted and cooled slightly
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2/3 cup nonfat vanilla yogurt
- 1 cup mashed bananas
- 1 cup flour
- 1/2 cup grape flour
- 1/2 teaspoon salt
- 1 1/4 teaspoon baking soda
Instructions
- Preheat oven to 350.
- Combine the first five ingredients in a mixing bowl with a whisk. Stir in the bananas and set aside.
- Combine the flour, grape flour, baking soda, and salt in a large mixing bowl. Stir with a whisk to break up any lumps.
- Make a well in the center of the dry ingredients. Add the wet ingredients and stir until just barely mixed.
- Allow to rest for 5 minutes before pouring into a loaf pan coated with cooking spray.
- Bake at 350 for 45 to 60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan 5 minutes before removing to a rack to cool completely.
