So, it just tasted like spicy meatloaf. Meh. I didn’t like the chili sauce in the glaze. I would have thought salsa with some ketchup to thicken it, but no. It was tomato sauce with chili sauce added. I really didn’t think it added to the taste of the meatloaf.
I agree with the oregano, but in a Tex-Mex style dish, I wouldn’t have though to add basil and now I know why. It just doesn’t belong. For a Tex-Mex style meatloaf, I would probably add some corn or maybe some black beans along with the chipotles. Maybe I’ll concoct my own spicy, Tex-Mex style meatloaf. We will not be making this again.

Chipotle Meat Loaf
Ingredients
- 1 ounce white bread
- ½ cup uncooked regular oats
- 2 cups chopped onion
- ½ cup ketchup, divided
- 1 teaspoon salt
- 2 teaspoons dried oregano
- 1 ½ teaspoons ground cumin
- 1 ½ teaspoons ground coriander
- ¼ teaspoon ground red pepper
- 2 garlic cloves, minced
- 1 large egg, lightly beaten
- 1 ¼ pounds extra-lean ground beef
- ½ pound ground turkey breast
- Cooking spray
- 2 teaspoons minced chipotle pepper in adobo sauce
Instructions
- Preheat oven to 425°.
- Place bread in a food processor; pulse 5 times or until coarse crumbs measure 1/4 cup. Combine breadcrumbs and oats; set aside.
- Combine onion, 1/4 cup ketchup, salt, and next 6 ingredients in a bowl; crumble beef and turkey over onion mixture. Add breadcrumb mixture, and stir until blended.
- Press mixture into a 9 x 5-inch loaf pan coated with cooking spray. Combine 1/4 cup ketchup and chipotle pepper; spread over top of loaf. Bake at 425° for 45 minutes or until a thermometer inserted in center of loaf registers 160°. Let stand 5 minutes before slicing.
