I participated in a blackberry challenge. I don’t think I’ve ever cooked with them before. Four berry jam maybe? That’s about it. And it was frozen berry mix. Does that count? Yes?

Since I haven’t cooked with these berries before I thought I’d do some brainstorming. I cam up with blackberry jam, scones, sauce for chocolate waffles, barbecue sauce, sticky buns, added to chocolate bread pudding, and finally Blackberry Tiramisu. I don’t know why but pairing chocolate and blackberries sounds really delicious to me.

So, what Are Blackberries?

I know we’ve had them, but do you know what they are? Blackberries are juicy, dark purple-black berries that grow on thorny brambles. They’re also in the aggregate fruit family. That means that it’s a fruit comprised of many tiny drupelets, or individual fruits, that make up the larger aggregate fruit. known for their sweet yet slightly tart flavor, blackberries are packed with vitamins, fiber, and antioxidants. They add a burst of summer to any dessert.

It’s easy to mix up blackberries, raspberries, and black raspberries, but each has its own unique qualities. Blackberries are larger and glossier the raspberries. They have a firm texture and a core that stays inside when picked. Red raspberries are softer and hollow in the center. Black raspberries are just like their red counterparts, but they’re smaller and have a matte finish. Their flavor is more intense and sweeter than blackberries.

It wasn’t until the English settlers arrived and incorporated eggs and milk. And finally, when leavening agents became available, they were added resulting in the cornbread we know today.

Ingredients You’ll Need for this Blackberry Cornbread Cobbler

There are a few simple ingredients that come together for a cobbler that’s both homey and impressive. If you can’t find whole wheat pastry flour, you can use 3/4 cup of flour and 1 1/2 tablespoons of cornstarch. If you have cake flour, you can use 1/2 cup of flour and 1/4 cup of pastry flour.

Instructions to make this Cobbler Recipe

Preheat your oven to 350 F. Combine the berries with the cornstarch and one cup of the sugar. Toss to combine. Set aside while you prepare the cornbread topping.

Stir together the cornmeal, flour, baking powder and salt in a large mixing bowl with a whisk. In a smaller bowl, combine the yogurt with the egg and the remaining sugar and whisk until the sugar dissolves. Make a well in the dry ingredients and pour in the yogurt mixture. Stir until most of the flour is combined. Let the mixture rest for 5 minutes and stir one or two more times.

Pour the berry mixture into the bottom of a greased 9×12 inch casserole dish. Spread the cornbread mixture on top using a spatula to make sure the berries are completely covered. Cover and bake at 350 F for 20 minutes then uncover and bake an additional 20 minutes or until the topping is golden brown and cooked through. Cool the cobbler for at least 10 minutes before serving. This allows the juices to thicken more.

I know. I know. It's waaaaaaaaaaaay too early to be thinking of wild blackberries. But spring as sprung and my mind goes wild. What intrigued me to read this recipe was the cornmeal topping. I have never done that on a cobbler before. And that topper would work with any cobbler. I imagine it adds a special zing in the flavor. Zingyness—-spell check did not like my new word—goes with spring, don't you know.
