Dover Sole with Lemon Rind and Pine Nuts

True to form, we didn’t use Dover sole. We used tilapia, which I’m REALLY beginning to like in almost every fish dish we make. This dish was really good. I thought the directions were weird, and I used a cookie sheet with a lip instead of a baking dish, but all the flavors blended nicely and the pine nuts added a nice texture to the ingredients. I think we’ll make this one again, if I remember it.
