These were okay. The coating doesn’t get crispy if you don’t put the chops on a rack on the pan in the oven. If that makes sense. The top may get crispy, but the breading underneath just gets soggy. Or you could just coat them on one side!!
Par cooking the potatoes in the micro before adding the to the pork and finishing them in the oven is a good idea. I’ve done that with hash brown type potatoes for breakfast, but not roasted potatoes in the oven. I didn’t have Italian dressing so I used the Greek dressing I had. It was very good.
I may make this again, I may not. It seemed really easy to make and a full meal at that. I don’t know. We’ll just have to see. I served them with sauteed carrots and parsnips.
