Blistered Tomato and Goat Cheese Pasta
This Blistered Tomato and Goat Cheese Pasta is so good, the hubs didn’t even get a chance to taste it. Pasta water turns the goat cheese into a super rich and delicious sauce for the gnocchi.

It’s day two of #FarmersMarketWeek. Did y’all see the deliciousness that the bloggers shared yesterday? Oh, my word. There are delicious eats there. You really should go check them out. I’ll wait.
You see what I mean?
Of course, it helps that all the ingredients are farm fresh. When you cook what’s in season, it tends to be so much yummier, don’t you think? At least I think so. Picked the peak of ripeness any fruit or vegetable has heightened flavors that are out of this world delicious. Which makes it easy to cook up amazing eats.

So, I’ve had this idea for a blistered tomato sauce for a while now. I made a couple of pan roasted and blistered tomato dishes before, but not many. I will have to say that the blistered tomatoes in these Greek lamb burgers with blistered tomatoes and tzatziki spread are fabulous. They’re modeled after another recipe for crostini. Which has goat cheese in it.
You see where I’m going with this? Well, sort of in that direction. When the hubs and I first started living together, I made a goat cheese pasta that was out of this world. It was simply some pan seared chicken with pasta. While the pasta is still warm, you add the goat cheese and some of the pasta water to make a sauce. However, that dish doesn’t have tomatoes in it.

But since the crostini has both the blistered tomatoes and the goat cheese but not pasta, it was a logical conclusion to sort of mash it all together into one delicious dish. So, that’s just what I did. Minus the chicken of course.
Initially, it was going to be gnocchi, the tomatoes, and the goat cheese. But I knew the hubs wouldn’t go for that. It would be a hard sell with the gnocchi. He’s not a huge fan of the potato pillows of goodness.
I, on the other hand… well. Potatoes. Need I say more?

I planned on slicing and tossing the sausage with the pasta. Yeah, that didn’t happen. The pan I chose to use was smaller than I thought. Or the gnocchi package was more than I thought. Either way, there was no room at the inn for the sausage to toss with the pasta. And I didn’t want to get another pot or pan or bowl dirty with this dish. So, I sliced the sausages after I air fried them and spooned the gnocchi around the sausage.
This dish was so good, he didn’t get the chance to try any of the pasta. It was mine. All mine. He did get the remaining sausages I didn’t eat for dinner or lunch the next day. Oh yes. All that pasta and half a sausage went to lunch the next day. And it was even better the next day! Granted, I had to add a little milk to keep it being to dry, but I ate every last bite and will definitely be making this again.

Now, I can’t express enough how important your pasta water is to making a good pasta sauce. I add it to my carbonara, Alfredo, and marinara. The starch in the water helps the sauce stick to the pasta. It’s just a known fact. That’s why there is only goat cheese and pasta water in this sauce. The water makes the goat cheese silky smooth and coats the gnocchi with amazing goat cheese flavors.
Some of you might not like goat cheese. And that’s fine. You could probably use a Boursin or other creamy cheese for this dish. A garlic and herb one would be divine! In fact, I might have to try that myself. Because that does sound really good! And it would be a quick and easy meal to whip up on these crazy days we have.

So, typically, I get to see my husband maybe 2 days a week and if I’m lucky 2 nights a week. Of course, one of those 2 days I’m working so it’s really only a half a day. All in all it’s a total of MAYBE 48 hours at best. I know. Some of you are saying how lucky I am to not have to put up with him as much as y’all do. However, I’m a bit sad about this part because I really do love my husband and love spending time with him. Even if it just sitting on the couch watching TV.
Heck, he even makes doing laundry fun.
He’s informed me that his sole purpose in life is to make me laugh as much as possible. How can you not want to be with him after hearing that? When I’m in a mood or pissed about something, he does something goofy or silly just to make me laugh. That’s just who is and what he does. So, to not be around that is kind of lonely.

But, neither of us plan for this to be our lifestyle for the rest of our lives. He’s working hard to move up the ladder. And he’s really good at what he does. He enjoys it, even though it’s long hours and hard work. And lots of walking. I’m proud when I hit 10K steps a day. He’s like, “Honey, I did 3 times that today!” Yeah, well, I have a desk job. So, there’s that.
Where was I going with this? Oh yeah! So, I try to make sure there’s something for him to eat when he gets home. Be it a whole leftover meal for him or even just some extra protein to munch on; I try to make sure he has something to eat. And he did! He had the sausage which I knew he loved. They were all gone by the next day. But the pasta was something I knew he wouldn’t it eat. So, I ate it all!!

Because look at how delicious that is! That sausage swimming in that goat cheese coated gnocchi has just the right spice and flavor to blend in with the tangy goat cheese and sweet tomatoes. The tomatoes aren’t really supposed to burst per se. They just get a nice char on the outside. Which makes it a little difficult to toss the pasta and goat cheese with the tomatoes. You don’t really want them to break, but it’s okay if they do.
Their juices just add to the delicious sauce that coats the gnocchi.

And that sauce coating the gnocchi is heaven. See it right there? It’s screaming MAKE ME NOW! So, head to your local farmer’s market and pick up a pint of some cherry tomatoes. Make sure they’re cherry tomatoes. Grape tomatoes might be a bit too bitter for a blistered sauce. Their skin is a little tougher than a cherry tomato. And they are a little more bitter. Do a taste test for yourself. I did. So, make sure they’re cherry tomatoes!

Blistered Tomato and Goat Cheese Pasta
This Blistered Tomato and Goat Cheese Pasta is so good, the hubs didn’t even get a chance to taste it. Pasta water turns the goat cheese into a super rich and delicious sauce for the gnocchi.
Ingredients
- 1 pound gnocchi
- 20 ounces Italian sausage
- 1 pint cherry tomatoes
- 2 teaspoons chopped garlic
- 6 ounces goat cheese
- 1 cup pasta water
Instructions
- Please the sausages in an air fryer. Cook at 370 for 10 minutes, turn over, and cook for additional 10 minutes. Allow to rest until the pasta is cooked.
- Bring a large pot of water to boil.
- Heat a skillet over high heat. Reduce the heat to medium-high and swirl the olive oil in the pan. Carefully place the cherry tomatoes in the skillet. Cook, for 3 to 5 minutes, shake the pan to stir the tomatoes and cook for 5 more minutes.
- Continue until the tomatoes are nice and blistered all over.
- Add the gnocchi to the water and cook until they float to the surface. Use a slotted spoon and remove the gnocchi from the pot to the skillet.
- Reduce the skillet heat to medium. Stir in the garlic and saute 1 minute before crumbling in the goat cheese.
- When the goat cheese begins to melt, stir in 1/2 cup of pasta water. Simmer for 1 to 2 minutes. If the sauce is too thick, add the second 1/2 cup of pasta water.
- Slice the sausages and place in the center of a plate. Spoon the gnocchi and sauce on each side of the sausage and serve.
