Just made this for dinner.  I was shopping at WalMart and they had some stir-fry beef on mark down.  It was quick.  Which is always a plus for a weeknight

 

dinner…especially after the day I had!  UGH!I cut the strips into smaller pieces for it to cook faster.  As usual, I didn’t REALLY follow all the directions.  I sauteed the beef and then removed them from the pan.  Then I added the bell peppers and cooked them for about 4 minutes.  Then The sauce went in until it thickened.  I added the beef back in and let it simmer for a few minutes more.

 

It was quick and good.  I think I’d want more of the chili sauce.  I expected it to be a little spicier, but it wasn’t.  Not that it wasn’t good, but I thought it would be spicier.  I might use the sriracha sauce instead of the Thai chili garlic sauce I used.  Maybe I’ll add more garlic next time.

 

There’s another package of beef in the freezer.  I just might whip this recipe up again.

Spicy Beef and Bell Pepper Stir-Fry

Ingredients

  • 1 tablespoon canola oil
  • 12 ounces flank steak, cut diagonally across the grain into thin slices
  • 1 red bell pepper, cut into thin strips
  • 1 yellow bell pepper, cut into thin strips
  • 3 tablespoons lower-sodium soy sauce
  • 1 1/2 tablespoons rice wine vinegar
  • 1 tablespoon minced peeled fresh ginger
  • 2 teaspoons chili garlic sauce (such as Lee Kum Kee)
  • 4 green onions, cut into 2-inch pieces
  • 2 teaspoons toasted sesame seeds

Instructions

    1. Heat a large nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add steak to pan; cook 2 minutes, searing on one side. Add bell peppers; cook 2 minutes or until beef loses its pink color, stirring constantly. Remove beef mixture from pan.
    2. Add soy sauce, vinegar, ginger, and chili garlic sauce to pan; bring to a boil. Cook 1 minute or until slightly thickened. Add beef mixture and green onions to pan; toss well to coat. Sprinkle with sesame seeds.
