Cajun Pot Roast with Maque Choux
O M G this was FABULOUS!! I WILL be making this again. It was so tasty!! I trimmed the chuck roast of all the fat I could, which left it in chunks. I used two bags of frozen peppers and onion mix. I tossed the meat with Emerils Bayou Blast. It was spicy and VERY tasty.
