I’m still trying to figure out what the marshmallows are for.  *shrugs*

 

I forget to check to see what type of cake mix I had in the cabinet.  It was chocolate, so I made a chocolate version with LF ingredients.  I use applesauce in place of the oil and egg beaters instead of eggs.

 

My strawberries were pretty tart and I used SF Jell-O.  So, the strawberry topping was tangy.  Not too much so that it was unbearable, but it was not what I was expecting.  I should have tasted my strawberries I put all this stuff together.  If they’re too tart, you might want to add some sugar.  I’d say use regular Jell-O but you’re probably already home and ready to bake it so you won’t be able to use regular Jell-O.  LOL

 

The strawberries and Jell-O make a nice topping for the cake.  The picture looks like it’s on angel food cake.  I think it would be a good option for this recipe.  The chocolate is yummy with it.  Regular yellow would be good or even strawberry cake to add to the flavor?  But that might be too much strawberry.

Fresh Strawberry Upside Down Cake

Ingredients

  • 2 cups crushed fresh strawberries
  • 6 ounces strawberry flavored Jell-O® mix
  • 3 cups miniature marshmallows
  • 18 ounces yellow cake mix, batter prepared as directed on package

Instructions

    1. Preheat an oven to 350 degrees F (175 degrees C).
    2. Spread crushed strawberries on the bottom of a 9x13 inch baking pan. Evenly sprinkle strawberries with the dry gelatin powder, and top with mini marshmallows.
    3. Prepare the cake mix as directed on the package, and pour on top of the marshmallows. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 to 50 minutes. Cool in the pan for 15 minutes. Run a knife around the pan to loosen the sides, and turn the cake out onto a serving tray. Store cake in the refrigerator.
